Course Description

This course aims to provide students with a broad understanding of the operational aspects of the international hotel industry together with knowledge of the underlying management principles involved.

This programme will introduce the basics of hotel manager skills. By the end of this course students will have an understanding of the food and beverage operations within a hotel industry as well as knowledge of front office operations and accounting procedures.

The course combines sixteen modules in tourism management.

The CTH Diploma and Advanced Diploma programmes are recognised by major organisations in the hospitality and tourism industries as suitable for employment at supervisory and management level.

CTH Management Programmes have been awarded HCIMA Endorsement. All learners on CTH Diploma programmes are eligible for Affiliate Membership of the HCIMA and learners who successfully complete the CTH Advanced Diploma programmes are eligible to apply for Associate (AHCIMA) membership.

The qualifications are recognised by a number of British universities, notably Bournemouth and Thames Valley Universities, as providing appropriate academic preparation for students to apply for entry onto their degree programmes in hospitality and tourism.

Course Aims:

The aims of the course are to provide students with:

1. An understanding of the food and beverage operations within a hotel

2. Basic knowledge of food science, hygiene and nutrition

3. An understanding of the role of the front office and reception in a hotel

4. An understanding of the facilities and accommodation services within a hotel

5. A basic knowledge of hospitality costing and control systems

6. An understanding of the staffing and supervisory aspects of the industry

7. The basic principles of marketing and how to apply them to the hotel industry

8. An understanding of the role of tourism within the industry

9. Knowledge of computers and their application and use within the industry

10. The opportunity to explore the scope of the industry, the various activities contained
within it and its position in relation to the world market

11. Skills required to manage food and beverage operations in the industry

12. An understanding of the strategic processes applied in the hospitality industry

13. An understanding of the operational aspects and the skills required to manage
operations effectively

14. Knowledge of the financial and accounting records used in the industry

15. An understanding of human resource management supported by extensive
benchmarking.

16. Knowledge of data analysis, interpretation and making recommendations for
the future.

Entry to the Programme

Applicants to the programme must have:
• the equivalent of a high school diploma or British O-Levels, plus for overseas students an English level test result of IELTS 5.0 or equivalent
• completed an application form and be at least 18 years of age

Progression

BA(Hons) in Hotel Management

Assessments

All Diploma in Hotel Management modules have a two and a half hour examination, set and marked by CTH.
Five of the six modules of the Advanced Diploma in Hotel Management are assessed by an assignment and a three hour examination. The sixth module is assessed through a 5000 word Management Research Report. All assessments are marked by CTH.

Grades and Certificates

Each candidate will receive a record of performance in one of four grades for each component of the examination. The grades are Distinction, Merit, Pass and Fail. Certificates are awarded to those candidates who achieve at least a pass grade in each component of their examination. Students are awarded Distinction, Merit, Pass and Fail for both examinations and assessments as appropriate.

A Pass is 40/1 00,

Credit is 60/100

Distinction is 80/100

Progression

Upon of the successful completion of the advanced diploma in Hotel Management, CTH students can apply for exemptions and advanced standing with a number of British Universities for the final year bachelor’s degree. CTH Management Programmes have been awarded Institute of Hospitality Endorsement (Hospitality leisure and Tourism management professionals).

All learners on CTH Diploma programmes are eligible for Affiliate Membership of the Institute of Hospitality and learners who successfully complete the CTH Advanced Diploma programmes are eligible to apply for Associate (Institute of Hospitality) membership.
